“AAK! AAK!” said Maquenque Macaw, who was a particularly noisy bird. I decided I was overdue brewing another saison – yes *another* as in fact one of my very first commercial brews was a saison. Maquenque Macaw fermented away quite happily without me needing to worry about it getting too hot in the warm weather. With lemon and orange peel, it’s got a citrussy note to the usual peppery saison taste. Casks of this will be preceded by a keg at Two Brews in late July. No bottles of this psittacine psaison (two silent p’s), as I put it into secondary with some of next door’s rhubarb, to create Turtill’s Rhabarbarum….
